凡是由芋头做出的料理,娘子都会试着品赏几口。
因为从小就喜欢吃芋头。
记得阿婆的客家煮法通常都是咸味。
小时候,过年过节最常见的是芋头扣肉了。
而妈煮的却是潮州风味的。味道偏甜。 咸甜都好,娘子都爱吃。
香炸椰糖芋丸
材料:
芋泥(芋头蒸熟弄烂) 200克
糯米粉 30克
赤砂糖 20克
馅料:椰糖 (适量) 切碎
外层: 美乃芝 少许 、 杏仁片(烤香后)适量
[ 做法 ]
1) 先把芋头切片然后蒸熟后,弄成芋泥。
2) 加入赤砂糖和糯米粉搅拌成均匀和Q润的面团。
3)平均分成小份后,把小面团搓圆,用手指在中间轻压一洞,然后放入适量的椰糖。然后收口包好。(千万不可弄破,不许让椰糖流出)
4) 热祸加了油烧热,把包好的芋丸放入炸至金黄色即可捞起。
5)凉后,抹上一层美乃芝,再粘上适量的杏仁片即可享用。
