巧克力奶油香橙北海道戚风杯 (Chocolate Cream Orange Hokkaido Chiffon)









用了之前的食谱,把鲜奶换了鲜橙汁,做了香橙口味的北海道戚风杯。








 巧克力奶油香橙北海道戚风杯(Chocolate Cream Orange Hokkaido Chiffon)


材料:

AA蛋黄 5个 
盐 少许
玉米油 30克
鲜橙汁 70克
鲜橙皮屑 2汤匙
低筋面粉 65克 

AA蛋白 5个
白醋 或 柠檬汁 少许
赤砂糖 65克



内馅: 植物性鲜奶油 300克 + 无糖巧克力粉 3 汤匙 + 黄砂糖 1汤匙
(巧克力粉预先加入热水搅拌成巧克力酱)

表层撒面:防潮湿糖霜 (少许)



[ 做法 ]

1) 蛋黄+盐搅拌均匀。然后加入油和鲜橙汁拌匀。

2) 加入橙皮屑,筛入低筋面粉搅拌成均匀的蛋黄面糊。

3) 蛋白加入柠檬汁打起,分次加入赤砂糖打至湿性发泡。

4) 把蛋白霜分次加入蛋黄面糊里用刮刀轻轻搅拌均匀。

5) 再把面糊倒入杯子里至7分满。

6) 烤箱预热165度,烘烤大约25分钟左右或表层出现金黄色即可。

7) 蛋糕烘好后,立刻把蛋糕取出烤箱放置待凉备用。
8)植物性鲜奶油用电动打蛋器搅拌至顺滑。加入巧克力酱搅拌成均匀的巧克力奶油。
把长型花嘴放入挤花袋里。再把巧克力鲜奶油倒入挤花袋里,把它挤进蛋糕里(从中间挤入)。
最后表层撒上少许的防潮湿糖霜即可。
9) 把挤了奶油的杯子蛋糕放入冰箱冷藏数个小时或隔夜享用,味道较佳。
