蔓越莓杏仁干果饼干 (Cranberry Almond Biscotti)

 曾在Eileen家吃过一道‘deng kok kok’可是又好好吃的干果饼干。
记得一次还很不客气地把整罐带回家慢慢吃。哈哈哈 。。。。。。
就是喜欢干果有嚼劲的口感。脆脆的好好吃。
一段日子过去,娘子也该自己学做了。
同时也是可以把冰箱里的材料和干果用掉,这多么好啊!









 蔓越莓杏仁干果饼干 (Cranberry Almond Biscotti)

食谱取自: Helena's Kitchen / Eileen



材料:

面粉 300克
发粉 1 茶匙 + 1/2 茶匙
细砂糖 120克
鸡蛋 3粒(稍微打散)
橙皮屑 1汤匙
Vanilla 香精 2茶匙
蔓越莓干 130克
南瓜子50克
杏仁果粒 150克 


[做法]

1)预热烤炉170度c备用。
2)将面粉、发粉 (过筛后)用木匙搅拌均匀。
3)细砂糖加入鸡蛋打发。加入橙皮屑、vanilla香精拌均匀。然后分次加过筛的面粉。
4)加入蔓越莓、瓜子和杏仁果,搅拌成一个顺滑的面团。
5)撒少许粉在桌面上,将面团倒在桌面上揉至成为一个光滑的面团。
6)把面团分成两条同等重量的长条。
7)将面团放在铺好纸的烤盘上,烘烤30-45分钟至熟。
8)烘好的面团,待完全冷却后,切成3 -5mm的厚片,在把饼干排在烤盘上,烘烤8分钟再取出烤箱,翻面再烘8分钟。待冷却后,装入罐子里封密保存。

* 要把长面团烘烤至熟透,烘不透的长面团,会导致饼干切片烘烤好后,硬得不堪入口 *

    Hee .. hee .. your these 'deng kok kok' Cranberry Almond Biscotti is so nicely baked ! Extra crunch with added pumpkin seeds ... can I have some ? ^-^!

    Oh... The biscotti recipe that you used required beating of eggs. I reckon that your biscotti must be the lighter kind than the mix and bake ones.

  14. Lovely biscotti! These are just perfect with a cup of coffee! My biscotti are all gone and I am wishing for some right now!
