蔬菜明虾天妇罗(Tempura Vegetables And Prawn)




对于做日本料理,娘子还是很生疏。
现在市场上开始有许多日本、韩国料理材料店了。所以能方便取得一些适用的材料。
在家自己准备日本料理却不难了。简单的蔬菜明虾天妇罗为这天的晚餐添上一些色彩。























蔬菜明虾天妇罗


材料:

明虾 6 - 8只(可以去前壳或无需。尾巴一定要保留)
南瓜 1小块(切片)
羊角豆 4根(切半)
番薯 1小个(切片)
茄子 1/2个(切片)

炸油(适量)


面糊

冰水 约1杯
蛋黄 1个
天妇罗炸粉 1杯(可以用面粉取代)

做法:

1)把蛋黄打散。慢慢加入冰水。最后加入粉搅拌成均匀的面糊。
2)将虾身上沾上一层面糊,然后放入热锅里,炸至金黄色。
3)也一样把蔬菜沾上一层面糊,重复炸完。
4)把炸好的天妇罗滤干油后,可以配上以下酱汁一起享用。



酱汁

酱青 1/2杯
甜酱青 1/2杯
姜末 1汤匙
白萝卜末(可以压出萝卜汁)3汤匙或更多


做法:把所有材料一起搅拌均匀即可。

Ingrendients : 

Prawn  6 - 8 pcs ( with tail intact )
Pumpkin 1 small cube ( cut into slices )
Lady Finger 4 pcs ( cut to half )
Sweet Potato 1 ( cut into slices )
Egg Plant 1/2 ( cut into slices )


Batter : 

Egg yolk 1 pc
Ice water around 1 cup
Tempura Flour ( can replace with plain flour ) 1 cup


Method : 

1) Beat egg yolk, followed by ice water, add in flour and stir until smooth.
2) To deep fry  prawn, hold the tail of the prawn and dip into batter and deep fry until golden brown.
3) Dip vegetables slices into batter, then deep fry in hot oil until crispy.
4) Drain tempura and serve immediately with sauce.




Dipping Sauce :

Light soy sauce 1/2 cup
Sweet soy sauce  1/2 cup
Grated ginger 1 tbsp
Grated radish 3 tbsp or more ( lightly squeeze out juice )

Method : All ingredients mix well
